These protein-rich cookies are soft, tender, and incredibly satisfying, made with cottage cheese or skyr for a boost of flavor and nutrition. The dough, enriched with cocoa, has a rich, chocolatey taste that pairs beautifully with the sweet, juicy slices of canned peaches tucked inside. The contrast between the dark cocoa and the bright peaches, along with the cookies` unique triangular shape, makes them not only delicious but also visually appealing.
1. In a bowl, combine the sugar and a pinch of salt.
2. Add the cottage cheese or skyr and mix well.
3. In a separate glass, add the baking soda, then pour in the orange or lemon juice to activate it.
4. Pour the activated baking soda mixture into the bowl with the cottage cheese and sugar, then stir until well combined.
5. Add the cocoa powder and melted butter, and stir again.
6. Gradually add the flour, mixing as you go, until the dough comes together.
7. Cover the dough with cling film and refrigerate it.
8. Take 7 canned peach halves and cut each into 4 wedges.
9. Roll out a portion of the dough to a thickness of about 5 mm (0.5 cm).
10. Use a square cookie cutter to cut out cookies from the dough.
11. Place a peach wedge on each cookie, then fold the cookie in half to form a triangular shape.
12. Repeat the process with the remaining dough and peaches.
14. Arrange the shaped cookies on a baking sheet lined with parchment paper or greased with oil.
15. Bake the cookies for 25-35 minutes at 160-170°C (320-338°F).
