Bright Rainbow Spiral Cookies are a fun and vibrant treat that will bring a burst of color to any dessert table! Shaped like spirals or seashells, these cookies feature three bold colors that swirl together to create a stunning visual effect. Best of all, they’re egg-free and made with simple ingredients, making them perfect for getting kids involved in the kitchen. The dough is easy to handle, and layering and rolling the colors is not only fun but also a creative way to engage children. With no complicated techniques involved, you can bake these cookies in no time and enjoy the excitement as they emerge from the oven, bright and perfect!
1. Cut the butter into cubes and place it in a large bowl.
2. Add powdered sugar and flour, then rub the mixture until it forms fine crumbs.
3. In a separate bowl, combine the sour cream (or yogurt) and baking soda. Stir until they react and the mixture slightly increases in volume.
4. Add vanilla sugar to the sour cream mixture and stir until combined.
5. Combine the wet and dry ingredients, mixing until the dough comes together. The dough should have a soft, smooth consistency, similar to an earlobe.
6. Divide the dough into three equal parts. Add food coloring of your choice to each portion. You can also use natural dyes: for example, add 1 teaspoon of turmeric for a yellow color or 1 tablespoon of cocoa for brown. Adjust the amount of coloring to achieve your desired shade.
7. Roll out each portion of the dough with a rolling pin. You can roll the dough to your preferred thickness. The thinner you roll it, the more spirals you`ll see in the final cookies.
8. Layer the rolled-out colored doughs on top of each other and gently roll them into a log.
9. Wrap the log in plastic wrap and place it in the freezer for 1 hour.
10. Once chilled, remove the plastic wrap and slice the roll into cookies about 0.5–0.7 cm thick.
11. Place the cookies on a baking sheet lined with baking paper or greased with butter.
12. Preheat the oven to 170°C (338°F) and bake the cookies for 20–30 minutes, or until the edges are lightly golden.
