This cheesecake-inspired cake is a treat you won’t want to miss! With a soft and lightly sweetened yogurt dough, honey adds a rich, natural sweetness, while a creamy filling made from cottage cheese, ricotta, or skyr provides the perfect contrast. Prepare the Dough:
1. Pour the yogurt into a deep bowl and add the baking soda. Stir well, and you’ll notice the yogurt volume increasing due to the reaction.
2. Add the honey (or sugar) and mix thoroughly.
3. Add the vegetable oil and mix again until smooth.
4. Gradually add the flour, kneading until you have a smooth dough.
5. Prepare the Cake Pan. Grease a rectangular cake pan (about 11 x 25 cm) or line it with baking paper.
6. Place the dough in the pan and use a spatula to spread it evenly along the bottom and sides, leaving a hollow area in the middle for the filling.
Prepare the Filling:
