Eggless Banana Chocolate Chip Muffins

Made without eggs, this recipe is wonderfully simple and perfect for novice bakers or anyone avoiding eggs in their diet.
The sweetness of ripe bananas combines beautifully with the richness of chocolate chips to create muffins that are moist, fluffy, and absolutely irresistible.
This recipe requires just a handful of pantry staples, making it a go-to option for last-minute baking sessions. Plus, with the option to add nuts, spices, or a dusting of powdered sugar on top, you can customize these muffins to your liking.

Ingredients:
- Ripe bananas: 3 pcs. (medium-sized);
- Sugar: 4 tablespoons;
- Vanilla sugar: 1 teaspoon (or to taste);
- Baking soda: 0.5 teaspoon;
- Vinegar: 1.5 tablespoons (to activate the baking soda);
- Vegetable oil: 2/3 cup (using a 200 ml cup);
- Flour: 2 cups (sifted);
- Chocolate pieces: as desired (chopped into small chunks);


1. Mash the Bananas:
Peel the bananas, place them in a large mixing bowl, and mash them thoroughly until smooth using a fork or blender.

2. Add Sweeteners:
Add the sugar and vanilla sugar to the mashed bananas. Mix well until combined.

3. Incorporate Wet Ingredients:
Add the vegetable oil and baking soda (quenched with vinegar) to the banana mixture. Stir until the ingredients are evenly blended.

4. Make the Dough:
Gradually add the flour to the wet mixture. Mix until you achieve a soft and slightly sticky dough.

5. Optional Add-Ins:
If desired, fold in chocolate chips for extra flavor. Mix until evenly distributed.

6. Prepare the Muffin Tins:
Grease about 10 muffin tins with oil or line them with paper liners.

7. Fill and Bake:
Divide the dough evenly among the prepared muffin tins, filling each about 2/3 full. Bake in a preheated oven at 170Β°C (340Β°F) for about 25 minutes, or until a toothpick inserted into the center comes out clean.

8. Cool the Muffins:
Once baked, remove the muffins from the oven and let them cool completely on a wire rack.

9. Prepare the Chocolate Glaze:
In a microwave-safe bowl, combine the chocolate and vegetable oil. Microwave in short intervals, stirring between each interval, until the chocolate is fully melted and smooth.

For decoration

Ingredients:
- Chocolate: 20 g;
- egetable oil: 2 tablespoons;
- Almond flakes or any ground nuts: as desired (for garnish);

10. Decorate the Muffins:
Dip the top of each cooled muffin into the chocolate glaze. For added decoration, sprinkle almond flakes or your choice of nuts over the glaze.

11. Serve and Enjoy:
Allow the glaze to set before serving. Enjoy your delicious banana muffins!
