This vegan orange cake is a delightful, plant-based dessert that proves you don`t need eggs, butter, milk, or yogurt to create something truly delicious. 1. Take a large orange and squeeze out the juice, yielding about 230 ml.
2. Set aside 30 ml of the juice for the glaze, and pour the remaining 200 ml into a separate container.
3. Add the baking soda to the 200 ml of juice and stir. You’ll notice an active reaction.
4. Add sugar or powdered sugar and stir until it dissolves.
Stir in the vegetable oil.
5. Add sparkling water and the zest from the orange you squeezed, and mix well.
6. Gradually add flour, mixing thoroughly to combine all ingredients.
7. Prepare a baking pan by greasing it with vegetable oil or lining it with parchment paper.
8. Pour the batter into the prepared pan. If desired, sprinkle any nuts on top.
9. Bake the orange cake in the oven at 180°C (350°F) for about 45 minutes.
10. Allow the cake to cool completely.
While the cake is baking, prepare the orange sugar glaze.
1. Mix the remaining 30 ml of freshly squeezed orange juice with powdered sugar until smooth.
2. Once the cake has cooled, spread the glaze evenly over the top.
3. Allow the glaze to harden before serving.
